2 slices Ezekiel bread (or whole wheat bread)
4 egg whites (or 4 whole eggs)
113g mozzarella cheese, sliced
2 medium tomatoes, sliced
1 tsp butter
Fresh rosemary, parsley, or basil
1 tsp balsamic vinegar
Salt & freshly ground black pepper

Toast the bread until lightly golden.
Cook the egg whites or whole eggs to your preferred style.
Lightly butter the toast while it's still warm.
Layer the sliced tomatoes over the toast.
Add the eggs and top generously with mozzarella cheese.
Sprinkle with fresh herbs, salt, and black pepper.
Melt the cheese using an oven, broiler, or a covered pan until bubbly.
Finish with a drizzle of balsamic vinegar and serve immediately.
